Fraged dough: put flour and salt in a bowl.

Melt the lard / butter partially (in the microwave) then put it over the flour and start mixing by hand until the dough becomes sandy.

Then add the sugar, mix and then add the baking powder quenched with lemon juice.

Add one egg and mix well after each one.

We will get a non-sticky dough (if you see that it is not so, add a little more flour !!) which we wrap in transparent foil and let it cool for 1 hour.

Raisin cheese filling:

Put the cheese in a bowl, add the sugar, vanilla sugar, semolina, eggs and mix gently.

We soak the raisins in warm water mixed with rum essence and leave them for about 20 minutes.

After 1 hour, take the dough out of the fridge, knead it a little and divide it into 2 equal pieces.

Spread each piece of dough in a rectangular sheet.

Place the first sheet in a tray lined with baking paper, prick it from place to place with a fork, then place the filling.

Sprinkle the raisins on top, then place the second sheet, prick it from place to place with a fork and then put the cake in the preheated oven.

Bake for 20-30 minutes until it starts to brown slightly.

Take it out of the oven and let it cool then portion ... that if we have patience !!

This cake was made by my mother when I was a child. I liked it so much that it didn't even have time to cool down and I was so greedy to lick my tongue, but to leave the memories and get to work.

INGREDIENT:
For the dough:
2 eggs
7 tablespoons sunflower oil
7 tablespoons sugar
7 tablespoons milk
1 teaspoon of quenched ammonia with vinegar
1 pinch of salt
1 sachet of vanilla
flour (for a dough not too hard)
For the filling:
650 gr ricotta (sweet cheese)
7-8 tablespoons sugar
1 sachet of vanilla
2 eggs + 1 egg yolk
100 gr raisins
3 tablespoons semolina

First prepare the filling:
-Put the raisins in 50 ml of rum for 5-10 minutes.
- mix the cheese with the sugar, then add the eggs one by one, the yolk and the vanilla, and at the end put the semolina and the squeezed raisins.

7-8 tablespoons sugar
1 sachet of vanilla
2 whole eggs + 1 egg yolk
100 g raisins
3 tablespoons semolina.

First prepare the filling:
-Put the raisins soaked in 50 ml rum for 5-10 minutes.
-mix the ricotta with the sugar, then add one egg at a time, the egg yolk and the vanilla, and at the end add the semolina and the squeezed raisins.
When the filling is ready, prepare the dough:
-mix the eggs with the sugar, a pinch of salt and seed oil, then add the milk, vanillin and ammonia and finally add the flour little by little until you get an easy-to-handle dough, just right consistency and non-sticky.
-divide the dough into 2 parts, a larger one for the base and a smaller one for the cover.
-spread the largest part of the dough and with the pastry obtained, cover a pan greased with butter, then spread a little semolina on top of the pastry and put the ricotta filling, which you will spread, and finally cover with the other pastry .
-close the edges well and with a fork prick here and there on the surface of the cake, then grease with the remaining albumen and bake at 180 & # 176 until it is slightly golden. At this point remove from the oven and let cool.
Serve the cake sprinkled with vanilla icing sugar.
